My son is obsessed with the Minions. So, he went crazy over these Minion inspired pancakes made with Mott’s applesauce!


(Sorry, I just had to. Hehe!)

I mean, come on, who can’t be excited over the Minions? They are just funny and adorable! I’m pretty sure his next birthday party is going to be Minion themed. He calls all of the Minions Kevin, even though I know the others have names too. (I just looked them up. Their names are Stuart and Bob. Didn’t know that? Neither did I!) Anyway, you can imagine how excited our son was when I came home with Mott’s apple juice and applesauce that had the minion, Kevin, on them!

You know how you see all those fun pancake shapes and awesome things that the “awesome breakfast” moms do? Well, I wanted to be an awesome breakfast mom too and became determined to create a Minion inspired breakfast to surprise my boys with! But, since I have all boys who don’t like having to wait for their food, I had to come up with a recipe that would be slightly healthy, quick, and fun!

Since Food Lion is pretty much right down the road from where we live, I hopped in the car and took a trip to gather together ingredients for this fun breakfast I had in mind. I knew I wanted applesauce because I wanted to make the pancakes an apple cinnamon flavor. On the shelf were Mott’s applesauce containers that had Minions on them! This was perfect! I would get the applesauce I needed AND have a picture of Kevin to base the breakfast off of. I was just a tad bit excited. (Apparently, Mott’s is doing a Limited Time Only packaging in concordance with the Minions Movie coming out, so the Minion labeled products are only available through July 31st, 2015 in all Food Lion stores.)

Along with the applesauce, I decided to get apple juice for the boys to drink with their fun breakfast. I seriously could not pass up the adorable little 8 oz bottles of Mott’s Apple Juice, which also had Minions on them! I was seriously going to be the best mom ever, even if only for one awesome breakfast.

Anyway, after getting everything I needed, I went home and was ready to wow the crowd with a fun breakfast the next morning! And, I think I ended up doing a pretty good job!

As soon as our son saw these on the plate, he immediately exclaimed, “KEVIN!” Needless to say, he was rather excited to eat these pancakes. What made this mom extra happy was knowing that he was eating a relatively healthy breakfast!

So, to make these Minion inspired pancakes, you will need the following:

  • Pancake Mix (any will work)
  • 2 Mott’s Cinnamon Applesauce Cups
  • 1-2 Small Green (or Red) Apples
  • 2 Raisins
  • 3 Strawberry Stretch Island All-Natural Fruit Strips

To start off, you will need to make up your pancake batter. I chose to use a boxed version because I was going for quick and easy. Then, mix in two of the Mott’s Cinnamon Applesauce cups. This will take your pancakes from being plain to having a wonderful apple cinnamon flavor.

Next, make up some pancakes. You don’t want them to be too big, but you also don’t want them to be too small. To make the perfect Minion pancake, you’ll want them to be about 6-7” in diameter.

For the Minion faces, I’m going to show you how to make both Kevin and Stuart. So, grab your apples and slice off the end with the stem. You’ll want three circles for the eyes/goggles. Be sure to keep the skins on because the skins are what make the goggle effect. Cut three thin slices (about ¼ inch thick).

Using something to help you gauge the perfect circle, cut out the core centers. You could just do it free-style, but I used a rounded 1 teaspoon measuring spoon to cut around. Once I cut out one circle, I used that cut-out to help me with the rest of them.

Set aside your three apple goggle pieces. To keep them from browning, put them in a small bowl with lemon juice.

Your next step is going to be cutting out eyes. Using one of your apple cut-outs for measuring purposes, cut three circles (slightly larger than the apple cut-out) out of the strawberry fruit strips. I used a knife to do this, but the kitchen scissors would have been much easier.

After you cut out the circle for the eyes, you will want to cut out the rest of the pieces for the mouths and the goggle straps. You are going to want to eye up the size of your pancakes to make sure you don’t make the mouths too small or too big. Then, just cut three relatively thick strips for the goggles. You’ll trim them down once you have everything else in place.

Here comes the really fun part – the assembling of the faces! Grab your apple slices and place them on the pancakes (two right next to each other for Kevin’s face and one in the middle for Stuart’s face).

Then, place your strawberry fruit strip circles over the holes in the apples. Put the mouth pieces in the appropriate spots and trim the long fruit strips for the goggle straps. Top off the eyes with raisins for the pupils. Voila! You have two adorable Minion pancakes!

I also felt great feeding this to my boys because it was mostly healthy! Aside from the pancake mix, everything else is gluten-free. Since our family has been trying to eat more gluten-free recipes, this made me really excited! The strawberry fruit strips have “gluten-free” written on the packaging, so I didn’t have to search for it. The Mott’s applesauce and apple juice are gluten-free and are an excellent source of Vitamin C.  So, this mommy was very happy about the fruity, health-packed meal I was providing for my boys at the beginning of their day! Not to mention, the pancakes had so much flavor from the Mott’s Cinnamon Applesauce that they didn’t even ask for syrup. I’d say I was pretty much a winner that morning!

My 4-year old is already asking me when I’m going to make them again. They were a hit! Yay! Go me!
